Before chocolate is chocolate it comes to us from the seeds of the tropical tree, Theobroma cacao.  In history the Greeks used the term 'food of the gods' to describe Theobroma.  Back then chocolate was thought of as a delicacy, a privilege and a honor.  It was a rarity that one would be able to indulge in such a pleasure as chocolate that when it was given as a gift you must have been held in the highest regardes by your giver.  Over time we have been given the pleasure of having this decadent treat whenever we want . . . waiting in line at the grocery store, while getting gas and on break at work.  Many companies have attempted to explore the wondrous delights that chocolate can make, but there are only a few companies that have taken this ingredient and become artist.  Using it as if the thought of it's rarity still existed and provided it with nurturing complexity that is the existence of chocolate.
